Limited Shelf Life
Another factor contributing to the high price is pistachios’ short shelf life. While other nuts, such as walnuts, can be stored indefinitely under proper conditions, pistachios last only about one year before they begin to dry out, turn brown, and lose their flavor. This is why pistachios are often salted—to help preserve them for a longer period.
